Maria’s Story: when a tortilla becomes a promise
Aventillas™ began with one mother, one child and one painful question: “If I can’t control everything, what can I control?”
More than twenty years ago, María Pacheco walked through every parent’s nightmare: her young son faced cancer and, with time, passed away. Between hospitals, lab results and medical terms, food stopped being “just food”. It became a daily choice between resignation and doing something, however small.
María chose to act where she could. She dove into vegetables and leafy greens, whole grains, legumes, seeds, oils, herbs and spices. Nights that used to end in exhaustion turned into quiet hours of reading, taking notes, and reimagining her family’s everyday meals.
One pattern kept repeating: in her home, like in so many homes, almost every meal passed through a tortilla. Breakfast tacos, quick wraps, last-minute quesadillas… If she could transform the tortilla, she could gently transform the meal, without asking anyone to stop eating what they love.
Over years of trial, error and flour-covered notebooks, María rebuilt the tortilla from the inside out: she traded refined flour for oats, added chia and flax for fiber and omega-3, chose avocado oil instead of cheap fats, and colored the masa with turmeric, beetroot, kale and red cabbage instead of dyes.
